The Wither Hills Cellar Collection is Wither Hill's boutique range that showcases their passion for wines that push stylistic boundaries by experimenting with small parcels of fruit. With just 4000 bottles made, simple yet precise winemaking is required for this one. The Gewürztraminer grapes used for this wine come from their Taylor River estate vineyard. They hand pick the grapes in early March as they start developing the flavours they want and while still alive with refreshing acidity. They stop the ferment when they have the perfect balance between vibrant fruit notes, sweetness and acidity. To give the wine a hint of colour and a suggestion of summer berries the Wither Hill winemakers blend in a very small amount of a specially selected Pinot Noir before bottling.

Nice, vibrant ruby red colour. Sweetly scented and classically "Martinborough" with a nice balance of red cherry, pretty florals and savoury, earthy notes. A delicious array of ripe and succulent red berry/cherry flavours and layers. Lovely spice and quite a lot of fruit and oak sweetness on the finish, complimented nicely by silky tannins and delicate acidity. Nice, fresh and youthful Pinot Noir expression. Great drinking now and will cellar nicely for 5 plus years. Food match with braised rabbit pappardelle.
