To create it, Glenmorangie take the delicate, fruity spirit of their giraffe-high stills and age it in American oak bourbon casks along with casks that once held Sauternes sweet white wine. The outcome is like a silky dessert-filled daydream of white chocolate swirled with lemon cream, crème caramel, almond croissants... all balanced by a soft drumbeat of spice. Dr Bill, Glenmorangie's Director of Whisky Creation, was born with a taste for adventure. And with this single malt he sought to create a whisky as unpredictable as his travels. Quinta Ruban is a whisky journey into the wild - a dark and delectable forest where the wind whistles with gusts of peppermint and dark swirls of chocolate can happen at any moment. In their giraffe-high stills, it begins soft and fruity, then gets darker and deeper as they let it age for 14 years in bourbon casks and port casks from Portugal. The finished whisky is a thicket of voluptuous flavour combinations. Walnut and black pepper. Mandarin orange and melted marshmallow. Dark chocolate bar and peppermint. The Glenlivet 15YO gets its distinctive rich and exotic character from a process of selective maturation in which a proportion of the spirit is matured in French oak casks. This whisky is deep gold in colour, and leaves behind traces of sweet almond and spice.

The Smoky Twelve is the perfect marriage of fruit, malt, oak and rich layers of smoke. Crafted from a combination of unpeated and peated spirit and three cask matured for at least twelve years in bourbon barrels, sherry casks, and Marsala wine casks. Ardbeg Ten Years Old is revered around the world as the peatiest, smokiest, most complex single malt of them all. Yet it does not flaunt the peat; rather it gives way to the natural sweetness of the malt to produce a whisky of perfect balance. A burst of intense smoky fruit escapes into the atmosphere - peat infused with zesty lemon and lime, wrapped in waxy dark chocolate. Bold menthol and black pepper slice through the sweet smoke followed by tarry ropes and graphite. Savour the aroma of smoked fish and crispy bacon alongside green bell peppers, baked pineapple and pear juice. Add water and an oceanic minerality brings a breath of cool, briny seaspray. Waxed lemon and lime follows with coal tar soap, beeswax and herby pine woodlands. Toasted vanilla and sizzling cinnamon simmer with warm hazelnut and almond toffee.

Highland Park 12YO reflects the unique culture of their remote island home on Orkney. Part of Scotland, yes, but originally belonging to a vast Viking kingdom. At Highland Park, they honour the spirit of their Viking ancestors, sharing their pride, integrity and fierce independence. Predominantly aged in Sherry seasoned European and American oak casks, Highland Park 12YO boasts warm wintery spices that are engulfed in waves of smoky honey, fruitcake and heather.
